Jiffy Corn Muffin Mix

I was wondering where this little cube parcel on my doorstep came from yesterday. Was I buying stuff on Amazon again? But no, it was the Jiffy Mix from Richard Bird (of R.Bird & Company) that I forgot about.
I’m not the only one to get this impressively-packed (including a signed letter of greeting and multiple layers of bubble wrap!) package: 10 other people around the world who had replied to R.Bird’s post about the Jiffy brand logo got two boxes of the mix in the mail. R.Bird loves Jiffy and wants you to as well.
So I mixed up a batch with the girlfriend tonight. Add an egg and some milk, a little oven-action and we had fresh corn muffins with our BBQ chicken, tomatoes, potatoes and zucchini, in the sun on the front porch.

They’re pretty damn good (crumbly, a little sweet), especially straight from the oven with butter. I always think of the Grapes of Wrath when I think of corn bread, of big dinners, sopping up the rest of your soup or stew with a big chunk of it, cup of coffee to wash it down, all after a full day of farm labour (well, I had a short day of Illustrator and HTML).
I’ll take your suggestion tomorrow, Richard, and try them stale, crumbled, with syrup on top. Thanks for the gift, it went to good use tonight and I’ll be passing the extra box onto a worthy (hungry) friend.

    Hey, Jeff. I’m glad you and your girlfriend enjoyed your first Jiffy! Sunset on the porch is a perfect scene. Too bad Jiffy’s so hard to come by for you, eh? If you’re really desperate, I’d be happy to pick up a case for you. (Your dime this time, though! ;)

    I am a srilankan American working for u.s. military as a civilian. I have chance to shop in AAFES in kuwait sometimes. I just wanted to know about the tiny packet with a muffin picture on it. I picked one and baked some jiffy muffins. My husband wanted to know how I found jiffy mix because that was his favorite at home. He is from Memphis, TN. Since then I make jiffy mix corn muffins to my coworkers also. They love it.

    Great meal with Jiffy Corn Muffin mix, brown and drain ground beef, season to taste or saute onion with it, make corn mix as directed on box for muffins, spread half in a pan, layer on ground beef, and lots of cheese, other half of muffin mix, bake at 350 degree until looks done, and edges brown, slice,enjoy with a side of salsa, sour cream or guac! My kids can’t get enough of this!

    YOU NEED TO PUT IT ON THE FRONT OF BOX,,THAT CORNBREAD WILL BE SWEET,,,IT RUINED MY CORNBREAD DRESSING.HAD TO START ALL OVER,,TRIP TO STORE,ETC.PLUS I AM A DIABETIC AND CANNOT HAVE THE SUGAR..

    To whom it may concern:
    My mother always used your corn muffin mix therefor I too use it always. I was really surprised that yesterday when I put 2 mixes in my iron skillet to bake that it never raised. I am guessing that the mix was old. I cannot tell by the box it has these numbers on it.(S9258C) Please let me know. I would appreciate it if you will send me a coupon to replace my mixes. I will not change brands because your is still what I like, normally.

    I love Jiffy! I always keept a stock of it at my house. A Little tip…add whole kernal corn to it or chopped up Jalapenos…..yummy!

    I have gotten a few boxes of corn muffin mix that contained little black bugs ih the mix. These purchases have been made over a period of time and at different stores.Is ther an explanation for this problem?

    I bought 2 boxes of Jiffy corn bread mix yesterday.
    Today I mixed it up and put it in the muffin pans in the oven. Seven minutes later I check on them, and each and every one had exploded in the oven. My goodness what a mess!!
    Please let me know what could have been wrong. I am still cleaning up the mess.

    I love Jiffy corn mix! Grew up in Ohio — my mom and grandma always had 3-4 boxes of it in the pantry. When my local drugstore has them on sale 3/$1.00, I load up!!
    My absolute favorite way to eat it is for a snack by placing a chunk of the cornbread (either warm from oven or warmed in microwave) into a cereal bowl, sprinkle with sugar and add milk.
    Another favorite recipe is: take a box of jiffy mix, add 1/4C milk, a small can of creamed corn and a good dose of cracked black pepper. I put the batter into giant muffin tins and bake about 20 mins. My husband loves when I pack these in his lunchbox.

    I just opened 2 boxes of Jiffy corn muffin mix – stamped with a L9025B and a K9025B, and both of them contained little dead black bugs.

    I found several boxes of Jiffy Cornbmuffin mix in the back of my baking closet! I didn’t know how old they were, but I baked a half dozen and they turned out tiny and hard. So I took another box, added an extra egg and half tsp. each of baking soda and powerder, and they came out much better. Is there an expiration date on this stuff? Is there a better way to get the muffins to rise than what I did?

    Oh, yeah, the first time I may not have let it sit the requisite 3-4 minutes, but still, I think they should have risen more than they did. Please help. I have three more boxes to use up.

    I use Jiffy corn muffin mix all the time, Bugs in — old boxes, if not using for awhild put boxes in zip lock bag may help. Flour will get buggy too if not used alot. I used to put my in the fridge ! WA-LA- no bugs !! hope this helps !

    90% of the Jiffy mixes I get have bugs in them too..Little tiny black (mealy bugs I guess)..Seems to me that by now Jiffy Mix would have come out with a better way to seal the packages..YUK! Makes me stop buying them..But I needed it to make corn pudding..Though I cannot find a recipe without using Sour Cream which I do not have and its midnight now can’t go to store! Thought all I needed was butter, eggs and milk..whole kernel corn and cream corn..HELP

    I use Jiffy, My sister uses the other, and I think the other has too much salt. My sister thinks not. Her Blood Pressure is higher then mine…I just send for a recipe book. My son took his back. He visited the plant during a school trip.
    My grandmother used Jiffy, as also my Mother, I was going through their old recipe books and found a different recipe for the coffee cake. So when I try it out, will let you know.
    As for the bugs, itโ€™s an old mix; Best way is to put the date on them when you bring it home. If you are going to keep it for a while or open it but it in the frig. Mice also love the stuff. So I put mine in the frig. And I never buy more than I could use for the month

    I don’t know if this is the corn pudding recipe you were looking for?? We call it corn souffle
    1 pkg jiffy cornbread mix
    8 oz sour cream
    1 – 16 oz can of cream corn
    1 stick of butter (melted)
    2 eggs beaten
    Mix all together & bake 350 degrees for 40-45 mins. Its good!

    Hi Sid,
    I have found with any flour products, if you do not placed them in a freezer, the little bugs you are speaking of will eventually crop up in any brand name product. This is not Jiffy’s fault but more than likely the grocery store has not rotated their stock and the flour product has been sitting on their shelf for awhile before you purchased it. If you are not going to use the product right away, make room in the freezer for a box or two of Jiffy.

    I chop 1/4 cup of frozen corn kernels in blender and ad with 2 tbs butter to the mix . Really excellent.

    I live in Florida – bug capital of USA – all boxes with grains go into a plastic bag as soon as I get them home – have never had a “buggy” Jiffy Mix or any other for that matter. Hope I haven’t jinxed myself now.

    I need to make a 9 x 13 pan of cornbread. Can you just use two boxes and combine or do I need to make two smaller pans? I am feeding 20 for football on Sunday.

    if you are elergic to eggs and can’t make jiffy muffins but u like them add 2 eggs worth of apple sauce and mix well…they will be more crumbly but they taste just about as good and they are more fluffy sometimes.

    I been having trouble with your Jiffy corn muffin mix.I found bugs in every box that I,ve brought from several diffrent stores. I put it in the refrigrator. Still when I go to used it I found Bugs in everytime i go to make it. It makes me sick to think if someone that can see would eat it with the bugs in the mix. I do not want to use this brand any more and I will let other people know to watch out for bugs. Iam very anger to find bugs in Jiffy corn muffin mix every time I go to make it. ANNA

    As far as the bugs go, I have never had a problem with them. It may be either the warehouse where they are stored or possibly your cabinets, especially if it is an old home or an apt. and the previous tenant or owner may not have been very adamant about cleaning.I had a box stored in the back of my cabinet with a best used by date of 01/10/06. It was unopened and I made corn muffins this morning. I added a half teaspoon each of baking soda and baking powder just in case to get them to rise. They turned out great and completely bugfree.

    I recall as a little boy, my mother making a huge pot of pinto beans with strips and strips of bacon… and she would top off the whole meal with Jiffy Brand muffins! MMMmmm-mmmm good! Now that she has passed on, I make the pintos/bacon and cornbread muffins in her honor and sit back and recall how good it was as a child.. and how its just the same as a 37 yr old man. I like the sweetness that comes from a Jiffy muffin, but I must say.. I like it a bit sweeter.. so I actually add a cup of sugar to Jiffy mix when making the muffins. YUM! You cant beat Jiffy Mix!

    To my Jiffy mix, I add another cup of self rising corn meal. Cuts down on the sweetness. add two eggs and buttermilk I use an iron skillet with butter , heated up and mix poured in to bake. Very good.

    I grew the past 40 yr with this my grand mother was so thrilled with this stuff, I have used for the past 20 always at thanksgiven to make my corn bread dress My daughters always thinks it has to be maked just that way!!! Now for this genteration My grand daughter loves helping in the kitchen she get the box and set up all the stuff we need to made corn bread muffins at least onece a month or so.!! So tration has been past down with thie little box of corn bread mix!!! I have use all of the jiffy things thur the years!! Love them. I have always keep my dry items in a plastice type box or in the frezeer, My MOM told me to!! From Ky-FL-MO-NC Bugs are Bugs!

    It came out crumbly,there was no bugs but,it had the taste of stale flour..and.i wonder how it tastes with not so stale flour.And it came out quite hard on the outside,but moist inside..it rose well,but looked far different from the pictures..D;

    I was jusdt about to make a brand new container of Jiffy Blueberry Muffins and there were TONS of bugs in the container. This isn’t the first time, either. Is there any alternative substance where I can make cupcakes and muffins without using flour, Jiffy Mix, or anything those bugs are attracted to??

    Hi. I’m Mary in Mississippi. This week our church family have agreed to go on a meat fast. So, I went home Monday and Tuesday night and guess what I fixed for dinner? Blueberry jiffy mix muffins (umm, umm, good!!!) and eggs. We were the happiest bunch! It’s not like we have a lot of meat anyway, right; but, we could appreciate not having meat those two nights with the jiffy mix muffins making the house smell warm and toasty!!!

    I think that Jiffy Corn Bread should have a very obvious & easy to read date stamp on the box. I am sick of opening boxes that have black bugs in them. I can save my money or buy another brand. This is crazy!
    Does housing the boxes in the refrigerator solve the bug problem?

    I TO HAVE FOUND LITTLE BLACK BUGS IN SEVERAL BOXES OF JIFFY MIX, AND THEY WERE MOVING. I ALSO WENT TO A DIFFRENT STORE TO GET A DIFFRENT BOX AND THAT TO HAD LITTLE BUGS. I AM DISGUSTED BY THIS BECAUSE THATS GROSS. I WILL NEVER PURCHASE JIFFY BUG MIX AGAIN…

    Hi. I am also from Canada, Last fall we went to the State of Maine for the week-end away,
    and I bought 2 boxes of Jiffy mix. We just loved it, but I am unable to find it in Canada.
    Is ther any place in New Brunswick that would
    carry the Jiffy Mix. It reminded me of my
    childhood when my mothrer and grandmother would make Johhny Cake.

    I baked a batch of Jiffy Corn Muffins last night. They didn’t rise and took a long time to cook and since they still weren’t done we elected to toss them out rather than eat them. I’m so glad to find possible solutions here (adding powder/soda/extra egg/self-rising corn meal) for the remaining boxes in the pantry. Haven’t run into bug problem with this batch but have seen bugs in flours and mixes stored in pantry on family farm. Solution is to seal up in zip-top bag or refrigerate as previous posters have noted. I don’t think it’s gross since I understand the reasons bugs find it attractive! But like most people I’m not wild to eat them. Thanks so much for writing your successes and failures. Glad to see Jiffy is as much a part of the fabric of other traditions as it is in my family. (It’s great with Chili, the sugar helps tame the heat!)
